Ash reluctantly agreed to meet Vanessa at a renowned Chinese restaurant in the city center for dinner, solely because Ava encouraged him to do so. He didn't have any interest in getting involved with Vanessa any further, as he knew she had ulterior motives – she aimed to use him to win back Henry and break up the Welsh couple.
Now that he has Ava by his side, Ash no longer wishes to meddle with Amy and Henry's relationship; in fact, he genuinely wishes them well. Being with Ava has transformed his perspective on the world, and he feels like he's been given a fresh start.
However, Ava views Vanessa's invitation as a chance to keep tabs on her. They are closely monitoring Vanessa to determine if she is connected to the mastermind or not.
